I developed this recipe after buying a similar nutty granola for overnight guests. I have also been trying to find lower carb alternatives for my husband and I. The 8 oz bag of nutty granola that I bought was almost $8.00 and after looking at the ingredients, I realized that this granola could be made much more economically.

- ½ cup each raw chopped walnuts
- ½ cup raw sliced almonds
- ½ cup roasted, salted pepitas (pumpkin seeds)
- ½ cup roasted, salted sunflower seeds
- *You can swap the above with any nuts that you prefer. If you do not use salted, roasted nuts, you can add ¼ tsp salt
- ½ cup raisins
- ½ cup unsweetened coconut
- ½ cup mixed chia, hemp and whole flax seeds (I use Badia Whole Trilogy Health Seeds)
- ¼ cup honey
- Place all ingredients in a mixing bowl and mix well until all is combined.
- Place on baking sheet that has been covered with tin foil and sprayed with nonstick cooking spray.
- Bake in oven at 325 degrees for 15 minutes, stirring once during that time.
- Remove from oven and let cool completely.
- Crumble into pieces and store in air tight container. This granola will stay fresh in the container for 2 -3 weeks, if it isn’t eaten up before that!
