Savory Chocolate Brussels

I used to flip dairy fairy cartwheels out when my favorite food bloggers would go days without posting. I’d not know what to eat so I spurted milk from my body to live on. Some of it made it into a glass.

I would say you should just stop listening but this is typed so you’d just have to stop reading when I get awkward with words.

I wouldn’t understand where my food bloggers had gone. How could my food mothers and other goddesses just leave me? I’d feel completely lost and just simper over to the stove to make bacon and eggs.  Then I would feel happy because bacon and eggs is always delicious.

Without their recipes to guide me I had no idea how to cook and I was even scared to do so. There were too many spice combinations I didn’t understand. What if there were carbs hiding in the spinach? Little carbs may have jumped out of the oranges, turned micro, and restructured the leaves. I didn’t know.

That was at the point where I was counting carbs and looking at food as equations rather than simply as food.

At first the body does need to relearn its intuitive knowledge of how to take care of itself. When first starting on keto I was still a sugar ravishing human that weighted 110 pounds and thus thought I was healthy. I had to rewire my brain’s pathways to accept that sugar was a drug. It turns out that drug keeps your body from knowing when your body is full. Your body thinks of the most vivid resource when hungry and sugar is one of the most vivid of all. My mouth dripped for chocolate at every thought of it and I’d eat without a stop once it made its way in.

I’d adapted to the point I did have the full feeling, but I’d eat sugar without being able to stop. Keto cured me of that by detoxing out the sugar and returning my body to itself. In a few weeks I’d finally reached a point of true food gauging. My body spoke to me about everything it desired. There was no fear impulse to scarf down a Crunchwrap Supreme or an uncontrollable urge to drink down a tub of ice cream after I let it melt a few hours and then topped it with Butterfingers. After being off sugar for months candy actually started to look like toys that I couldn’t understand as food. Why were people eating the toys in their Happy Meals? I’d realize quick but it still felt odd to watch.

I’ve fallen in and out of keto a lot the last couple of months. I’ve been writing in Marfa and been in a film festival in Sedona, so food was given to me often and I was broke so I just let it slip. Sedona was incredible and they fed us everyday as part of the VIP experience. I was in a film that was submitted and got in. The nurturing and wisdom that came from the town even inspired me to write them a letter called To the Sedars, The Sedona Counsel of Elders. I still need to hand write it on a scroll for them.

It hasn’t been horrid. It felt like cheating but with a very sexy donut. I didn’t slip that far, but I did find the most succulent chocolate molded into soft lumps with sparkling cayenne gently fondling their flavor. Oh my god these truffles were so rich and creamy and mmm I’m lost in the memory every time I touch it.  The oddest mind moments occurred when I would have sugar and then want to eat everything in edible sight. The toys became food again. I still keep caving to chocolate, and yesterday I even went too far in chocolate and wound up eating lots of chips too. Sigh. I’d only had an avocado, cheese, bacon and cabbage up to that point and was in full control. Then one bite of chocolate and I actually watched as my eyes turned everything to food that minutes before I hadn’t craved at all.

Today I’ve only had water and I’ll kill the cravings with green tea throughout the day’s hours. I want keto back like a drug addict knowing their cure.

Since typing that I finally found coconut oil and cocoa. Before this moment I had been craving chocolate and thought it was just for the sugar, but then realized I haven’t had red meat in days so I could be feeling cravings for the magnesium and iron. After the pure combo of cocoa and coconut oil touched my mouth an hour ago, and I felt my mouth melt to the taste, I now that was it. That prefrontal cortex song of nutrients soared through my brain like that first bite of steak. It tasted even better than tiny chocolate bars. Ha. Puny cocoa moments. I thought of them after and my brain laughed. The cravings were gone.

While in Marfa I did create a dish I can have forever in life, regardless of any restrictions I dare place on my mouth. I got high one night and had this block of pure cocoa. I also had just taken a small scoop of coconut into my hands and rubbed it into my cast iron, fully pushing it into the iron and soaking myself in the moment of my hands and oil meeting my favored cooking tool.

I then saw the bar of pure brown and picked it up, tried to eat off a chunk and realized it was too hard. My eyes cast themselves about the room and saw my heated iron just begging to be used. I turned up the heat and pushed the cocoa bar into the oil until it met the iron. It slowly melted in. The brown seeped into the pan and coated the black with melted chocolate. I was lost in it and just let it melt as I rubbed the bar deeper and deeper in as the bar got smaller and smaller in my hands while the chocolate poured off.  I held the bar with my right hand and my left finger nuzzled itself into the pan and scooped the chocolate into my mouth. Oh my savory bliss of earthenly pleasure. My eyes would not stay open in order to fully absorb themselves into the taste with me.

 

At first my mind yelled that it would be hard to get out and said I shouldn’t use the whole thing! Thoughts melted away, unable to penetrate the flavor the oil and chocolate were making.

Time lost itself as I let the bar melt all the way in and got a spoon. I dashed salt on top and just stood there, body leaned in with elbows on the counter as I spooned bite by bite into my mouth. I was still in full control as the pleasure melted into my senses and I got lost in pure chocolate. Then I paused and decided to get Brussels in on this. I opened the fridge and pulled out the tiny green leaves bunched into a shell, carved them open and then in fourths and placed them in the melted chocolate. I heated them over medium high and watched them turn crispy in the cocoa, pushing them about the pan as they told me what to do.

Crispy Brussels leaves soaked in chocolate is such a delicious crunching seduction. Sprinkle salt on top and you have all your senses could want.

Oh and the cocoa comes right out. My cast iron was more clean after it than before. If any sticks just add more oil and fry things in it. I left some in the pan and fried an egg on top of it the next morning. It was so flipping eggwheels good.

Cocoa Buttered Brussels

Ingredients:

Brussels Sprouts

1/4 Bar of cocoa (or 2 T of cocoa powder)

About 2 Tablespoons Coconut oil (or butter)

Directions:

Melt chocolate into cast iron by either adding coconut oil to the pan and melting your cocoa paste into it, or adding butter to the pan with cocoa powder.

Chop the Brussels into quarters and fry them in the chocolate, pushing them around occasionally with hands or a spoon, for about six minutes. Try them randomly to see how cooked you like them, Brussels need to be crispy with a barely soft inside, but that’s just my preference.

Chocolate drives me insane.

Okay so ghee chocolate. I was going to make a too easy coconut oil chocolate recipe. I just mix a 1:1 ratio of coconut oil and cocoa powder together and it is all my body wants for hours. I feel so synchoronized with it. My body understands it, and has even mapped it in my brain with a permanent spot. Oh yes. Your body maps the nutrients you give it like connections to life. It’s like when you search for someone in a room and find them. Your brain just has these maps of resources. Where’s Waldo but for food.

My most potent brain map connections are to meat, oils, fats and cocoa powder. To combine oil, or any fat, with cocoa, is just a mind symphony reaching through my brain. It connects. My taste explodes with the flavor it knows, and I’m in bliss.

Ghee chocolate was a spontaneous desire and it was so delicious and looked so beautiful I just had to share it with you. It has a more buttery taste than the coconut oil, but I really enjoy it. The taste is a bit more like browned crispy butter fondling chocolate. I love it. In fact, I’m about to go make some more. I might not even chill it.

I didn’t. It’s incredible both ways. Try it both soft and hard.

Ingredients:

1:1 Ratio of Ghee and Cocoa

You can even turn life to epic mode and make ghee yourself.

I use this cocoa. To make your own go to cherry forest.

This will taste bitter at first, but your mouth and taste buds will adjust through time. Have a bit of it and let it be bitter, then add in a bit of sweetener and decrease each day so you can get closer and closer to cocoa.

Cocoa Butter Me

Directions:

Mix together and refrigerate to desired consistency. I like mine about thirty minutes in between soft and hard.

You can also use this as a glaze or pour it over ice cream. I just love it straight. It’s as good as a shot of Lagavulin, and I don’t type that lightly.

Apparently Daniel Radcliffe is ‘finally’ going to branch out from Harry Potter. Nevermind the fact his tree has already cracked off several branches that he speared through his skin to the skull and crafted them into Horns. Oh you don’t know of his strip from Harry down to Alan Strange in my favorite play, Equus?

This man has made himself bare for us in the sake of horses and mental disorderment.

He has caught a snitch with such erupting laughter I see the memory like a vivid happiness right now. He conquered a dragon people. With another dragon. That’s cool no matter what realm you’re in.

Then to mention the fact he is from my favorite childhood novel while his doppelganger (they switch this role), was in my twin’s favorite novel. We decided she got to love Lord of the Rings while I got to have Harry Potter. We both are enamored by each other’s mythical worlds as well, but I’ve poured into the Harry Potter Books with only a pensieve and wand to get me out. She’s read all of J.R. The chocolate bar will get you very messy so lick off immediately. I love deep messiness and deep chocolate so I’ll stick to it, but if you want a clear coat then go for the white chocolate frog. I promise though, once you go dark frog you never go back.

Now if you can handle chocolate without any sugar, like a full on human beast, then do not add sugar and have a completely warm and wet experience. The sugar adds an exfoliant depth to the bar.

Dark Chocolate Frog Massage Bar

1/2 Cup Cocoa Paste

1/2 Cup Coconut Oil

1/2 Cup Cocoa Powder

Dash Salt

1 Tsp Sweetener

(coconut sugar for paleo or erythitol for keto)

White Chocolate Massage Bar

1 Cup Cocoa Butter

1 Tablespoon Coconut Oil

1 Teaspoon of Sweetener

Dash of Salt

  1. Take a double broiler, or a saucepan with water in it and a bowl on top, (you do not want the water to touch the bowl, even at a simmer, as it will burn the chocolate).
  2. Bring the water to a simmer (do not let it boil) and let the cocoa paste melt. This can take about ten minutes so constantly watch and stir. Youtube and Instagram are acceptable distractions.
  3. Once the paste has melted stir in the sweetener and salt.
  4. Let the paste rest for about five minutes/until you can touch it without pain.
  5. Use your hands and mix the cocoa powder and coconut oil into the paste.
  6. Pour into silicone mold of some sort (I used a donut pan).

At this point you can store the bars in the fridge and use them in whatever shape they go cold in or take them out of the fridge once solid and let them come to room temperature. At this point you can mold them into shapes but do put them back in the fridge again as they will melt about 75 degrees.

Simply Raw Chocolate Recipe

The easiest chocolate is one part cocoa to one part coconut oil, but it can be taken further. If you are looking for a more solid and moldable chocolate then this recipe should fill your mouthly desires.

I would tell you about all the benefits of the raw goddess but I’m a bit queezy feeling today and I’m sure you can Google.

For me it’s just because it tastes like goddesses having a mating party on my tongue.

There is this method called tempering where you bring the chocolate to 150 degrees and it will stay more solid at room temperature, but this step is not necessary when it comes to taste. I have not personally tried tempering the chocolate due to having no reason to. At some point I’m sure I can bring it up to a little higher heat though and will report back.

Simply Raw Chocolate Ingredients

Chocolate and coffee is one of those magical mystery rides that you want to burst out singing for, and even let the taste get stuck in your head for years.

There are 200,000,000 Googly results if you ask it about the two together. That antioxidant burst of nutrients also works for the mind and even goes into my favorite field of study (since I’m going into it 😉 ) the neurosciences. It stimulates everyone’s favorite hormone: dopamine. The pleasure hormone as it is commonly slanged. “Chocolate may be used by some as a form of self-medication for dietary deficiencies (eg, magnesium) or to balance low levels of neurotransmitters involved in the regulation of mood, food intake, and compulsive behaviors (eg, serotonin and dopamine)” (Bruinsma 1999). This study was used to determine if chocolate is just a food or if it could be a drug. I so desperately love and crave chocolate to be inside me that it’s obvious why a study would jump the idea. Lady time is associated with the craves though, and since we lose so much iron and magnesium it could explain the correlation found between the two by Bruinsma.

Since I’m all iron and magnesium deficient chocolate is daily put in my mouth.

The taste never fades in its harmony and earthy depths, but at times…all the time, I experiment with what flavors can enhance its bounty of taste. Almond butter and coffee is already among my top mouth loves, so why not add coffee to chocolate? All three hasn’t been done yet but as soon as my macadamia nuts arrive a new recipe is coming to your mouths.

Cold Brew Raw Truffles Mind Lifting Mouthgasms

Ingredients:

1/4 to 1/4 Cup Ratio of Cocoa Powder to Coconut Oil

Plus

1 Teaspoon Cocoa Powder (per teaspoon of extra liquid such as cold brew)

1 Teaspoon of Cold Brew Coffe

1/2 Teaspoon Coconut Sugar/Honey (paleo) or Erythitrol (keto

1/4 Teaspoon Vanilla

1/2 Teaspoon Cinnamon (optional)

Note: You could use regular coffee most likely but cold brew basically functions as coffee extract

To Make Cold Brew Coffee Latte Truffles:

Fold in a tablespoon of coconut cream or coconut milk

Directions:

  1. Combine all of the above ingredients with your hands. (If you are scared of your hands turn into a bird)
  2. Roll into truffles and coat with cocoa powder or more coconut sugar or both.
  3. Consume or store in the fridge.

P.s. You could also put these into any silicone mold and they’ll pop right out into mouth bliss as well.

Secondary p.s.: use an abrasive material to wash hands or thoroughly lick them.

There’s a one to one ration that gives you a five minute quickie with mouth bursts of deep chocolate. Deadly darkened to only your desires with sweetness dripping from your fingers.

Coconut oil to chocolate. No melting required. Nothing needed but your hands and a combination of wet dripping oil and fluffy cocoa powder. Two on two melting together. Hard powders and oils to liquid mouthbliss. Then off to the fridge to become hard again.

You can take them back to room temperature, get your hands wet in oil, or not, and mold them all over again the moment you are wanting or lost in cravings. Then you can add raspberries, blueberries, cinnamon, snozberries, any mind desires.

I could really use some chocolate right now…or other things. Or both. A chocolate massage bar recipe is coming soonish.

So about these better than Reese’s mouthgasms. You basically take a 1 to 1 ratio of cocoa powder and coconut oil for some incredible deep chocolate. Some people can’t handle it going that deep though and need some practice. I added a half teaspoon of coconut sugar to my 1/4 cup to 1/4 cup ratio but you could also add erythitrol, go black and never come back, or even increase your sweetener.

The best part of this recipe is you can mold the cocoa and oil together and add just a bit of sweetener and increase it from there. You are in complete dominance of this chocolate. You could even take half of the batch with sweetener and the other half without sweetener and every day sample a bit of the darkness until you can go further into its depths.

Final Dark Chocolate Raspberry Macadamia Cups Mind Lifting Mouthgasms

The Taste

The advantage of getting into deeper and deeper chocolate is you get to taste and feel the maximum amount of pleasure chocolate has to offer. Earthy sensual notes that pair well with coconut sugar’s earthy flavors very well. If you layer that pleasure with macadamia butter then you’re just going to mouthgasm all over the place. The raspberries are optional but they add a bright crunch and fruity moment. Seriously though. Put these inside you.

Ingredients:

1/4 Cup Dark Cocoa

1/4 Cup Coconut Oil

6 T Macadamia Butter (or any nut butter…or jelly…or anything your mouth desires)

2-3 T Raspberry Pieces (chopped up frozen raspberries)

1/2 Teaspoon to Teaspoon Coconut Sugar (paleo) or erythitol (keto)

Directions:

  1. Mold the chocolate and oil together with your hands until they melt into chocolate.
  2. Mix the chocolate with raspberry pieces.
  3. Press the chocolate to the bottoms of your silicone molds and up the sides.
  4. Pour in your nut butter or mouthly desires.
  5. Refrigerate for 30 minutes.
  6. Cover the filling with chocolate.
  7. Refrigerate again for 30 minutes, or just eat them now.

Notes: The chocolate still stays solid at room temperature but does melt easily into your hands. It is still delicious but to keep the shape you will want to leave these in the molds or leave them in the fridge.

Chocolate Lemon Whipping Cream

When first beginning my low carb journey I feared the fats.

My brain was told low fat was the healthy choice and I should eat veggies low in calories with sides of fries I would dip into loaded potatoes. Sometimes I would put those bites on crackers. Carb loaded carbs I crunched into my soul.

I never enjoyed milk.

People kept pouring milk into my body, but it was never accepted into the tasty foods category of my nutrient centers. Milk went straight down the rejection digestion hole. It tasted like flavored water with some texture swirled in. Ick. I ate cereal dry except for frosted flakes.  Those would get milk poured on their tops and then I’d eat the flakes out, pour another crunchy sweet bowl, eat the flakes again, and then drink the finally delicious flavored milk. Chocolate could also work to make it nommy. Basically, I enjoyed the flavors put into the milk and then the texture enough to enjoy milk. Chocolate raspberry milk anyone?

Don’t worry. I’ll make a healthy swirl of that mind deliciousgasm soon.

My parents tended to get the low fat foods because they were told it was the healthy way to raise wee children. All I liked was cottage cheese in the low fat regard, or some yogurts with berries mixed in. I needed flavors to get trapped within.

What the low fat tycoons do is suck out the fat from foods and add sugar.

The low fat movement would have never survived if they just sucked out the fat because it tastes horrid. They added sugar and addicted America. Woo. If you do not believe such words try going off of sugar for a week and feel the withdrawals.

Your body craves fat as a nutrient source. To get control back of your body and mind this has to be accepted.

Once your body knows fats it will mouthbliss out on them. The body knows what it needs, but if you keep putting odd things in it will adapt. The human body is incredible like that. You will crave what you’ve been putting inside yourself because that is what your body knows.

Time to retrain your mind and body into blissing food connections.

Heavily Creamed Lemon Treat Ingredients

The Recipe of Blissgasming Cream:

I drank heavy cream straight for a while before wanting to bliss it up. The fat became incredible to my body and mind to where it soaked me in mouthgasms at the slightest creamy touch. Eventually I wanted to lace it with more drenched soaking moments. I squeezed in lemon juice and shaved some dark chocolate on top. I did this for weeks and one time I added too much lemon juice and decided to mouthbliss it into me anyways.

Oh my. It hardened into creamed fluff. I know that sounds contradicting but that is how incredible this treat is.

It is blissschaos being held.

Mouthblisses Needed:

     3/4 Cup Heavy Cream (organic or if you’re lucky grassfed. Supernatural is my favored brand for all things cow cream)

    Half the Squeezed Juices of  a Lemon. Get this thing to avoid seeds.

    90% Chocolates Bar, about a tablespoon but up to your desires.

To Create Mindbliss:

   1.  Squeeze the Lemon’s Juice into the Cream

   2.  Let sit for a Minute for the Lemon to Soak and harden the Cream

  3.  Shave or Chop Chocolate and Dress

  4.  Feel with Taste the Mouthgasms.
