Fall Spices Ox Tail

Ox Tail Strip

Ox tail is the beast mode version of ribs. They give your mouth that delicious and intoxicating fatty moment you can’t deny you love so much. Your caveman stomach is all kinds of Ramona level happy, it’s deep but always beautiful and there just for you. Unless you aren’t Scott Pilgrim…but she may have switched lovers by now anyway

That perfect tender moment of meat with just enough strength that you can pull at it and strings of savory meat fall to your chin.

I find it so enticing that I think of it all throughout my day, just waiting to come home and put it in my mouth. Now that I’ve used up my two pounds and dropped the bones back into my slow cooker with herbs and covered it in water to make some broth  (if you follow this deep wisdom of a redhead then expect liquid heaven, we can all pretend there’s heaven for this), I know how sad it is to live in life without ox tail.

Raw Ox Tail Mind Lifting Mouthgasms (1)

My tail came from my local farmer and was cancer  free (did you hear about the report from WHO? Processed meat is officially linked to cancer.). She is actually the human who handed me my first package, like the golden ticket to my newly favored cut of meat. I remember like it’s in my memory, a white package stamped with it’s name: Ox Tail, and the price led the bottom of the paper off of the edge. I went home and followed this recipe first. A simple slow cooker Jamaican version that really needed the fresh burst of fresh herbs that my dried ones just didn’t lend.

Since fresh herbs are so expensive I knew I’d have to branch out with my next white package and go for a savory taste.

I had just used pumpkin spice for my slowly cooked ketchup, pumpkin raw cookie dough, a couple of smoothies and some cookies. You don’t realize how much spice comes in that little container until you try and use all of it. I decided those cinnamon spices tantalized with cloves and allspice had to be used in meat. Those flavors would soak in and bring forth the depths of meat. This randomized decision led in to a fantastic finale that I’m incredibly excited to share with you, whoever you are and whoever you make it for. I’d honestly never cared so much about pumpkin spice until reading about all the immune boosting flavors of everyone’s favorite fall spices: cinnamon, nutmeg, allspice, and cloves all have high levels of magnesium and other things that boost our ability to fight off colds.

These spices are only  beaten by one nutrient source and that’s organ meat. The most nutrient dense food on this planet is organ meat and all of this balanced diet talk is about eating enough nutrients to make up for those we aren’t getting from the most delicious meat there is, organ meat.

Ox Tail really needs to be marinated for hours before it is ready to be cooked. The meat is very firm. This means that the marinade gets into the meat more than it can get into the more shallow meats. Then you very slowly cook the ox tail because it also takes longer to cook due to its rough nature. This time is very much worth it though once you get to taste ox tail.

As usually this delicious food is paleo, lchf, keto, sugar free, grain free, gluten free, dairy free and nut free. Not that any of that matters when it comes to just enjoying food, because when it comes to organ meat there is not diet but for human connection.

And yes I mostly just said that for Google search purposes 😉

Kale Chip Chicken Nuggets

Zombie fingers 2

I‘ve now had dreams of chicken nuggets spurting out the silver waste of unicorn blood.

Once you start sleeping in a hammock your dreams become as vivid as reality and so little bites of chicken, even in imagination form, caused the feeling of killing my favored horseish creature. We’ve leaped through Erasure’s voice in Always and believed in Schmendrick together. I thought my mouth was banned from chicken nuggets for life to avoid mind trauma.

This all spurred from watching Cooties, a comedy you can’t deny your mind of. This movie was so aware of its audience that it flawlessly brings out your chuckles right before soaking them in gore. Gore has always been more personally enjoyed than suspense or ear shattering music to me. The usual horror tactics work very well and I wind up jumping or…kind of…growling at the screen.

Cooties drops the common horror act and replaces Daniel Radcliffe’s horns with Elijah Wood’s hobbit gone…actually he remains pretty hobbit like. Jack McBrayer is still the gayest stereotype we’ve grown more sick of than the sickness you feel from the baby that gets bitten in this movie.

Yeah. Try to prepare for that mind trip. I’m sure Jorge Garcia will even share his shrooms with you.

Along with What We Do in the Shadows and It Follows this movie reminds you that there is more to movies than Failing Four and Jurassic Jupiter (because Jupiter lied to us about being able to rely on it too). Hopefully Cooties is still in theaters when you see this, or available on Netflix, because this movie is worthy of blisstons of praise and even kale chip encrusted recipes.

I‘m a variety human so I baked half of the chicken and fried the other half. I also coated half of the chicken in crushed up Kale chips and the other half in pork rinds. What? I’m single. Let me have pleasure.

The kale chip crackings were the most mouth soaking but pork rind fried chicken will always have its place on my fried chicken.

Ingredients for Cootie Free Chicken Nuggets:

The Breasts of 3 Chickens Cut into Two Inch Chunks

Enough Pickle Juice to Fill a Bag with 3 Chicken Breasts in it

(Quality of pickle juice matters, I go for TJ’s crunchicons and just pour out enough of the juice out to fill the bag and then put the lid back on and store it in the fridge)

1-2 Cups of Avocado Oil (or any frying oil)

4 Oz of Kale/Pork Rinds

or

2 Oz of Kale Shreds (I used Bombay Curry)

2 Oz Pork Skins (go for softer pork rinds and discard and super hard bits)

Final Chicken Nuggets

Prep Directions for Both the Oven and The Frying:

  1. Take a plastic bag or any dish that can hold things and put the chicken breasts in it.
  2. Fill the container with pickle juice and let it sit in the fridge overnight. Then go sleep or watch Cooties.
  3. Do not rinse off the pickle juice. It makes the kale chips or pork rinds stick to the chicken.
  4. The next day savor what you have watched and cut up the chicken into 2 inch chunks (or leave as strips).

Coated

Pan/Cast Iron Frying Directions:

  1. Coat your chicken chunks or strips in kale chips or pork rinds or both by pressing it deeply into them.
  2. Coat the bottom of a pan with enough frying oil to cover half of a chicken chunk.
  3. Fry each side for two minutes and remove from oil.

Oven Directions

  1. Set the oven to 400 degrees.
  2. Let your oven reach 400 degrees (about the time of an ARAM).
  3. Either toss your chicken in oil now then coat with kale chips or pork rinds or both, or coat them and then put the chunks in a bowl and drizzle in oil.
  4. Lay the chunks on a wire rack and set over a baking pan, or over a cupcake pan because you didn’t feel like finding a baking pan.
  5. Bake for 4 minutes and then flip and bake for 4 more minutes.

Baked vs. Fried

(Fried on the bottom baked on the top)

Fried vs Baked

For Avocado Mayo:

1/2 Teaspoon Pepper

1/2 of a Lemon’s Juice

Sriracha (optional)

Directions:

  1. Process ingredients together or smash them a lot with a fork.
  2. Drizzle in sriracha.

A Simple Mouthgasm: Fried Egg and Goat Cheese Sided With Mushroom

Fried Noms

In life there are moments we just want a quickie. Five minutes and full satisfaction with minimal cleanup.

I can put all your desires in one sweltering pan. As long as you have cast iron, but really, any pan that can hold dripping liquids will do.

On a day not too many days ago I opened the fridge, and there was an egg as well as goat cheese left from the watermelon radish mindtini and the cherry and goat cheese mindtini. I wondered if both egg and goat cheese could join my mouth for a threesome. Maybe the two weren’t meant for mating. The goat cheese is creamy and the egg cripsy.

They came. They saw. They conquered. Crispy cream.

Now it’s time to share.

This recipe is paleo friendly, keto friendly, primal friendly. It is human friendly.

What you need: Your mind, your body, an egg, heat, goat cheese, a mushroom, and oil/butter.

Turn on heat and soak your pain in oil. After you hear a sizzle remove the stem of your mushroom and put the mushroom cap into the pan. Eat the stem. Crack your egg on the counter then pour the egg into the edge of the pan.

DSCN0151

Wait until the egg gets white all over.

DSCN0152

Flip both the egg and the mushroom.

DSCN0153

Wait until you feel it is ready and transfer  your mouthgasms to a cutting board.

Make a goat cheese egg and add it to your mushroom. Let it warm and then spread it across the inner moments. Top fried egg with goat cheese. Realize you have no more eggs and just put the cracked shell into the picture.

Disclaimer: Unless you find humanely raised goat cheese dairy is not paleo. Here is a great article on it.
