Savory Chocolate Brussels

I used to flip dairy fairy cartwheels out when my favorite food bloggers would go days without posting. I’d not know what to eat so I spurted milk from my body to live on. Some of it made it into a glass.

I would say you should just stop listening but this is typed so you’d just have to stop reading when I get awkward with words.

I wouldn’t understand where my food bloggers had gone. How could my food mothers and other goddesses just leave me? I’d feel completely lost and just simper over to the stove to make bacon and eggs.  Then I would feel happy because bacon and eggs is always delicious.

Without their recipes to guide me I had no idea how to cook and I was even scared to do so. There were too many spice combinations I didn’t understand. What if there were carbs hiding in the spinach? Little carbs may have jumped out of the oranges, turned micro, and restructured the leaves. I didn’t know.

That was at the point where I was counting carbs and looking at food as equations rather than simply as food.

At first the body does need to relearn its intuitive knowledge of how to take care of itself. When first starting on keto I was still a sugar ravishing human that weighted 110 pounds and thus thought I was healthy. I had to rewire my brain’s pathways to accept that sugar was a drug. It turns out that drug keeps your body from knowing when your body is full. Your body thinks of the most vivid resource when hungry and sugar is one of the most vivid of all. My mouth dripped for chocolate at every thought of it and I’d eat without a stop once it made its way in.

I’d adapted to the point I did have the full feeling, but I’d eat sugar without being able to stop. Keto cured me of that by detoxing out the sugar and returning my body to itself. In a few weeks I’d finally reached a point of true food gauging. My body spoke to me about everything it desired. There was no fear impulse to scarf down a Crunchwrap Supreme or an uncontrollable urge to drink down a tub of ice cream after I let it melt a few hours and then topped it with Butterfingers. After being off sugar for months candy actually started to look like toys that I couldn’t understand as food. Why were people eating the toys in their Happy Meals? I’d realize quick but it still felt odd to watch.

I’ve fallen in and out of keto a lot the last couple of months. I’ve been writing in Marfa and been in a film festival in Sedona, so food was given to me often and I was broke so I just let it slip. Sedona was incredible and they fed us everyday as part of the VIP experience. I was in a film that was submitted and got in. The nurturing and wisdom that came from the town even inspired me to write them a letter called To the Sedars, The Sedona Counsel of Elders. I still need to hand write it on a scroll for them.

It hasn’t been horrid. It felt like cheating but with a very sexy donut. I didn’t slip that far, but I did find the most succulent chocolate molded into soft lumps with sparkling cayenne gently fondling their flavor. Oh my god these truffles were so rich and creamy and mmm I’m lost in the memory every time I touch it.  The oddest mind moments occurred when I would have sugar and then want to eat everything in edible sight. The toys became food again. I still keep caving to chocolate, and yesterday I even went too far in chocolate and wound up eating lots of chips too. Sigh. I’d only had an avocado, cheese, bacon and cabbage up to that point and was in full control. Then one bite of chocolate and I actually watched as my eyes turned everything to food that minutes before I hadn’t craved at all.

Today I’ve only had water and I’ll kill the cravings with green tea throughout the day’s hours. I want keto back like a drug addict knowing their cure.

Since typing that I finally found coconut oil and cocoa. Before this moment I had been craving chocolate and thought it was just for the sugar, but then realized I haven’t had red meat in days so I could be feeling cravings for the magnesium and iron. After the pure combo of cocoa and coconut oil touched my mouth an hour ago, and I felt my mouth melt to the taste, I now that was it. That prefrontal cortex song of nutrients soared through my brain like that first bite of steak. It tasted even better than tiny chocolate bars. Ha. Puny cocoa moments. I thought of them after and my brain laughed. The cravings were gone.

While in Marfa I did create a dish I can have forever in life, regardless of any restrictions I dare place on my mouth. I got high one night and had this block of pure cocoa. I also had just taken a small scoop of coconut into my hands and rubbed it into my cast iron, fully pushing it into the iron and soaking myself in the moment of my hands and oil meeting my favored cooking tool.

I then saw the bar of pure brown and picked it up, tried to eat off a chunk and realized it was too hard. My eyes cast themselves about the room and saw my heated iron just begging to be used. I turned up the heat and pushed the cocoa bar into the oil until it met the iron. It slowly melted in. The brown seeped into the pan and coated the black with melted chocolate. I was lost in it and just let it melt as I rubbed the bar deeper and deeper in as the bar got smaller and smaller in my hands while the chocolate poured off.  I held the bar with my right hand and my left finger nuzzled itself into the pan and scooped the chocolate into my mouth. Oh my savory bliss of earthenly pleasure. My eyes would not stay open in order to fully absorb themselves into the taste with me.

 

At first my mind yelled that it would be hard to get out and said I shouldn’t use the whole thing! Thoughts melted away, unable to penetrate the flavor the oil and chocolate were making.

Time lost itself as I let the bar melt all the way in and got a spoon. I dashed salt on top and just stood there, body leaned in with elbows on the counter as I spooned bite by bite into my mouth. I was still in full control as the pleasure melted into my senses and I got lost in pure chocolate. Then I paused and decided to get Brussels in on this. I opened the fridge and pulled out the tiny green leaves bunched into a shell, carved them open and then in fourths and placed them in the melted chocolate. I heated them over medium high and watched them turn crispy in the cocoa, pushing them about the pan as they told me what to do.

Crispy Brussels leaves soaked in chocolate is such a delicious crunching seduction. Sprinkle salt on top and you have all your senses could want.

Oh and the cocoa comes right out. My cast iron was more clean after it than before. If any sticks just add more oil and fry things in it. I left some in the pan and fried an egg on top of it the next morning. It was so flipping eggwheels good.

Cocoa Buttered Brussels

Ingredients:

Brussels Sprouts

1/4 Bar of cocoa (or 2 T of cocoa powder)

About 2 Tablespoons Coconut oil (or butter)

Directions:

Melt chocolate into cast iron by either adding coconut oil to the pan and melting your cocoa paste into it, or adding butter to the pan with cocoa powder.

Chop the Brussels into quarters and fry them in the chocolate, pushing them around occasionally with hands or a spoon, for about six minutes. Try them randomly to see how cooked you like them, Brussels need to be crispy with a barely soft inside, but that’s just my preference.

From Pasta to Pizza: 150 Low Carb Substitutes

Once upon a time the title to this post was: Top 10 Keto Substitutes from Pasta to Pizza.

Then, oh and then, I climbed a tower of swirled spaghetti hair to find a gorgeous layer of keto food bookmarks that merged fantasy into reality. It was then, in the golden hair of a spaghetti squash princess with meatball eyes, that I realized this post was destined to be so much more.

The delicious amounts of food just had to be shared.

This post is the bard to the failed author that started this post with a tiny idea of 10 substitutes with a few examples.

His play was about cheese being part of a sandwich. Sure, it sounds nice, but only someone holding a grilled cheese with OCD would actually go see it. Maybe an artist that believes the art of watching someone make a cheese sandwich supercedes making it at home. The whole heating it part becomes a thrill.

Excuse the cynicism

I’m getting a bit annoyed by artists from living in Marfa. I’m writing a fantasy novel for two months and I’ve been here 21 days. The locals are incredible, but the tourists…. There’s a bunch of young humans that come here to photograph dirt as though it’s new.

Pasta and pizza took a cue on this post from Flint and rained in sodas, alcohol, sweets, tacos, mashed potatoes, rice, snacks and chips in mass abundance. You’re going to have recipes for months. 

Fine fine, I concede. That’s still ten categories.

Don’t worry about running out of room though. This will just take one bookmark spot for you.

I was going through my mega hoard of bookmarks that I stored up when I was first starting ketosis and I realized there were so many it could easily be a 50 keto alternative recipes. Oh ha ha went food reality. We’ve got 100. Oh wait, 120 without even trying?

Nope. 150. There could even be more.

So many humans just love to embrace fats and the full blown pleasure they give our bodies. There are so many recipes from so many great blogger chefs just waiting to be tried.

So let’s start at the beginning, pasta.

Pasta for:

I never truly loved Pasta. I’m Irish not Italian. What I did love was the sauce and the meatballs on top of the pasta. I usually set the noodles aside and ate those delicious balls of soaked meat with the respect my mouth dedicated to their seduction. The fun of the noodles playing on my fork was a delight though. The game of ‘keep it on the fork’ is one I never mastered. Gnocchi is awesome. Simply stab.

Now I’ve replaced fun texture with veggie mouthgasms. Spaghetti squash compliments meats and sauces and gets to be a delicious flavor all on its own. You can feel the life nutrients fondle your brain into happiness. Mmmmmmmmm. I love it so much. Excuse me while I go pop a squash into the slow cooker. I recently realized you can just put the whole thing in and cut it once cooked. Recipe coming soon. Still need to take pictures.

Seriously though, we’ve got it covered. Besides, coconut and almonds taste better than wheat. Would you really go to a field and just eat a piece of wheat? Not unless you’re on grass. You would eat coconut or almonds raw though. We use those. It makes baked even better.

I love the playful texture of rice, and I especially love the way it soaks up the liquids we give it. Cauliflower rice is no exception and it reheats with the same texture the next day. No more hard rice to pick out from your chicken.

Cauliflower even cooks faster than rice.

If I’m not worried about moisture I’ll just chop a cauliflower in fourths, pulse it in the blender until it is ‘rice’ and go from there.

‘Go from there’ can even just be tossing it in my cast iron with chicken and coconut oil for ten minutes. Add spices. Eat deliciousness.

Mashed potatoes were the first thing I went for at Thanksgiving, and Christmas, and at Sunday dinner, and at home. Seriously though, we’re Irish. My parents love them too, and the only time they got sick of them was after actually going to Ireland and having them with every meal.

So when I tell you that cauliflower mash is just as delicious you have to at least 10% believe me. Potato is such a texture food. What you love is that whipped creamy fluff entering you. Cauliflower has the texture and butter whips itself right in. Add your spices and you’ve got a delicious side mash or even a mash to top your shepherd’s pie with.

Honestly if you’re worried about giving anything up on keto, then try this mash so you know you aren’t missing out. You’ll even want to stay on keto just to have cauliflower mash every day.

Honestly what you want from fries is a crunch on the outside and a soft inside. Oh wait,  you like them fully crispy? Well bring fries back into your control. I’ve mastered how I like fries from being on keto and making them myself.

Eventually you just love a crispy veggie rectangle that you can dip in homemade mayo or ketchup.

I love to just chop celerica root into chunks of semi rectangles and fry them in coconut oil with salt. They need nothing else.

I never really liked milk. Probably because I was given that 2% water with milk flavor growing up. I did love that Yoo-Hoo though, and Organic Valley chocolate milk, but I’ve always loved rich flavors, and eating the fat off the steak. My family even knew to give me that fat that were mental enough to not eat. Now I just drink heavy whipping cream straight or squeeze lemon in and add chocolate shavings.

Seriously though. The human body just loves fat.

I’ve recently switched to using coconut milk more than dairy and it is a creamy delicious treat too. Simply add chai, cocoa, a dash of vanilla, or drink it straight. You can also make ice cream with it. Oh and fudge.

Did you know you can slow cook cake? This changed my cooking life and I still have a folder of slow cooker cake ideas just waiting to be made. Mine will be more savory, think bacon and rosemary.

I don’t even need to look at the recipes anymore she’s taught me so well.

First, read this article by Mark about Ketosis and Alcohol. I personally love a glass of wine, a shot of gin or a dash of whiskey in my life. Beware that keto makes you a lightweight. Honestly it’s brilliant because it’s cheaper. Just watch out for that hangover. Don’t worry though, I’ve got a hangover smoothie for you.

I generally just do gin with soda water, a lime, and mint if they have it. So refreshing and delicious.

Mmmmm winter is finally coming, and with it must be a drink worthy of a night spent with Margaery.

The earthy spices are finally in the minds of everyone and spreading like cinnamon icing across our foods and dripping into our drinks with cinnamon laced in ginger, fennel, cloves, and even anise.

My humble human mouth is not yet a fan of anise, it tastes like licorice was steeped for twenty hours and then someone tried to turn it to wine.

It just tastes wrong and should not exist.

In my little version of reality this will not be true for long. Taste has to do with your body accepting foods as energy sources, and it simply feared anise because it was new. That was a year ago so right now it may even taste of licorice dripping out of a gorgeous chocolate hinted Merlot.

Coco Milk Chai Holding

Cinnamon sweetly touching ginger and fondling cardamon, black pepper, and cloves should happen every day. Coconut milk has this mouth dripping quality of not overpowering flavors while maintaining that creamy feeling you want from a latte.

Coconut in itself lends a new flavor for lattes that compliments and strengthens the spicy nature of Chai tea. 

Coconut also has its own sweetness despite being sugar free, and allows for very little need when it comes to extra sweetening. Try minimal sweetener and then increase if you feel you must, but the less sweetener the more you can taste the chai 😉

Final Cocomilk Chai Latte

Ingredients:

4 Oz of Fresh Water (quality matters)

1/4 Teaspoon Blue Lotus Masala Chai

(They use a powdered form which makes steeping unnecessary

Or Make Your Own like a beast human

(You’ll surpass my beastliness since I just used the powder)

4 Oz Full Fat Coconut Milk

(Or make your own)

1/8 Tsp Coconut Suga

(For paleo or Erythitrol for a low carb / keto version, coconut will lend a more earthy note)

Outside Coco Milk Chai

Directions:

  1. Boil the coconut milk and water together. If you made your own cocomilk and stored it in the fridge then be sure to add chunks of the cream layer that forms for maximal creaminess.
  2. Right when the cocomilk and water reach boiling stir in the Masla Chai or steep your own chai.
  3. Sweeten and let cool before consuming. My hurt tongue serves as reminder penance.

Making your own coconut milk can definitely be cheaper over time and is so simple that I do it about once a week.

Make sure to use full fat coconut milk otherwise it will taste thin.

Melted Flowers Cocktail

Somehow in the liquids of time gin got pushed into the Godfather territory. People know it exists but not many actually try it, and there’s debate on its worth for those that do.

I am a strong lover of gin. To me it has always tasted of melted flowers dripping into my sprog. The flavor is bright yet hardened by the alcohol soothing its inner dwellings. 

Tanqueray is my go to bar gin, but the very first gin to enter me was from this couple doing a tasting at a Spec’s. I was learning how to life on my own at this point. I had quickly moved in with a lover that I was, of course, going to spend forever with and no one understood how fiercely our love conquered age. I, oddly enough, had a dream about him last night where he left his Tech job to work at a vape job. He isn’t that silly, except for in dream mode. This human was working often though and I learned how to function in solo around the Fort Worth and Dallas regions.

My main entertainment was a joybliss hole called Buon Giorno’s in Grapevine. Go here if you have the chance. It is eldern style of dark woods and a European feel where you talk to people instead of your laptop. This coffee shop held three humans I still consider life term friends despite having left that time of my life a year ago.

While at Spec’s I was browsing through alcohol and trying to find something new. I already had Kraken in my hands, but I’d had that taste many times. I asked about gin and she smirked. She said not many people liked gin but she enjoyed it. I asked about the flavor and she said it was hard to describe, but they were having a tasting of it soon. Some local vendors were coming in with the gin they made.

To someone who was currently counting dollars a tasting sounded amazing before committing. My father was the frugal type and had us wait an hour and come back before buying things at fairs or malls. I appreciate that deeply now.

I waited about twenty minutes and browsed through collections of bottles. Some had flowers nuzzled inside but they weren’t the mouthbliss flowers that were about to soak my mouth and leave their love stains.

It was then that I met the makers of Gompers Gin. I remember it vividly despite it being an old memory. I fell hard for gin and asked how people could not love such a flavor. They said not all gin is like theirs and had laughter singing in their words. They meant it. I thought they might be a bit conceited, but bought the bottle to avoid losing such a flavor.

I actually finished the bottle to make this cocktail. They were not wrong, as I’ve learned in trying a few gins that a bite at the end. All gin is still accepted inside me, but you want to try perfection before delving to deep. Their taste is simply melting mouthbliss. Some people just don’t know gin as well as they do.

I deeply recommend getting Gompers Gin. Not just because the flavor is the first gin your mouth should know, or flavor it should learn anew with gin, but because they are small batch and the couple played Pokemon and Smash Bros.

1 to 3 Shots Gompers, or inferior, gin

The rest of the glass’s fill of soda water

The juice of a lime section

Lemon Coconut Creamed Spinach

Ignore all other recipes for this one. No flavor has erupted me into mindmouthbliss as this coconut creamed red spinach leaves bursted through with lemon ever has.

I even created a new word for it. These are the sounds of the taste. Flisseneeun with an accompanying moan of blissgasms. Think these sounds when you taste the creamed leaves and know truth.

Slowly yet within awarity I’ve been slipping away from cow products. Since I believe grass fed is not a corruption of animal, and I found a farm to get meat directly from, this is not an environmental construct. I enjoy the vegan community immensely and find then to be loving Earth dwellers instead of the cavern freaks I’d boxed them into. They do fight for something and thus we assume they have boxing gloves on at all times, but what I see is mostly a love for all things veggies. They truly love their food and have a connection to it.

I was going to make a creamed spinach recipe with cream cheese and red heirloom spinach, but as I took out the cream cheese I realized I didn’t want it. I wanted a vegan recipe that still dwelled out delicious mouthgasms.

Not just for the vegans either. My body signaled desires for the coconut and I try to listen to those desires.

In The Raw

There was my freshly made coconut cream (high powered blend of coconut flakes or minutes of food processing). I gently warmed the spinach in lemon oil and then creamed it with the coconut. Oh mouthing bliss this is better than any cream cheese variety I’ve ever had. The coconut creamed just melts right over the leaves yet maintains a coconut texture. It melts and molds more than cream cheese, as though they are meant to be within each other.

The Bliss Mouth Moment:

Coconut cream and spinach melt so well together there is no longer separation but instead a full burst of two flavors. The lemon bursts them together so three flavors make one. I suggest having nothing before or after this the first time your mouth learns it. My mouth felt like creamed fresh bliss even an hour after, as did the friend’s I put it inside of.

Mindgasm Moments:

   3 Cups Red Heirloom Spinach (Trader Joe’s has this, or use regular spinach)

   3 Tablespoons Lemon Olive OIl (Trader Joe’s also has this, but I’ll make a recipe for it soon)

   If you do not have lemon olive oil use the juice of half a lemon and two teaspoons of lemon zest

   1/4 Cup Coconut Butter

To Create Mindbliss:

   1.   Consume a raw leaf and raw coconut with corgi in the background to let your mouth know all layers of flavor.

   2.   Gently warm olive oil in a pan, about ten seconds, and add spinach.

   3.   Let spinach gently wilt but don’t allow any oil popping to occur

   4.   Spoon in coconut butter and let melt

    5.   Immediately consume

Chocolate Lemon Whipping Cream

When first beginning my low carb journey I feared the fats.

My brain was told low fat was the healthy choice and I should eat veggies low in calories with sides of fries I would dip into loaded potatoes. Sometimes I would put those bites on crackers. Carb loaded carbs I crunched into my soul.

I never enjoyed milk.

People kept pouring milk into my body, but it was never accepted into the tasty foods category of my nutrient centers. Milk went straight down the rejection digestion hole. It tasted like flavored water with some texture swirled in. Ick. I ate cereal dry except for frosted flakes.  Those would get milk poured on their tops and then I’d eat the flakes out, pour another crunchy sweet bowl, eat the flakes again, and then drink the finally delicious flavored milk. Chocolate could also work to make it nommy. Basically, I enjoyed the flavors put into the milk and then the texture enough to enjoy milk. Chocolate raspberry milk anyone?

Don’t worry. I’ll make a healthy swirl of that mind deliciousgasm soon.

My parents tended to get the low fat foods because they were told it was the healthy way to raise wee children. All I liked was cottage cheese in the low fat regard, or some yogurts with berries mixed in. I needed flavors to get trapped within.

What the low fat tycoons do is suck out the fat from foods and add sugar.

The low fat movement would have never survived if they just sucked out the fat because it tastes horrid. They added sugar and addicted America. Woo. If you do not believe such words try going off of sugar for a week and feel the withdrawals.

Your body craves fat as a nutrient source. To get control back of your body and mind this has to be accepted.

Once your body knows fats it will mouthbliss out on them. The body knows what it needs, but if you keep putting odd things in it will adapt. The human body is incredible like that. You will crave what you’ve been putting inside yourself because that is what your body knows.

Time to retrain your mind and body into blissing food connections.

Heavily Creamed Lemon Treat Ingredients

The Recipe of Blissgasming Cream:

I drank heavy cream straight for a while before wanting to bliss it up. The fat became incredible to my body and mind to where it soaked me in mouthgasms at the slightest creamy touch. Eventually I wanted to lace it with more drenched soaking moments. I squeezed in lemon juice and shaved some dark chocolate on top. I did this for weeks and one time I added too much lemon juice and decided to mouthbliss it into me anyways.

Oh my. It hardened into creamed fluff. I know that sounds contradicting but that is how incredible this treat is.

It is blissschaos being held.

Mouthblisses Needed:

     3/4 Cup Heavy Cream (organic or if you’re lucky grassfed. Supernatural is my favored brand for all things cow cream)

    Half the Squeezed Juices of  a Lemon. Get this thing to avoid seeds.

    90% Chocolates Bar, about a tablespoon but up to your desires.

To Create Mindbliss:

   1.  Squeeze the Lemon’s Juice into the Cream

   2.  Let sit for a Minute for the Lemon to Soak and harden the Cream

  3.  Shave or Chop Chocolate and Dress

  4.  Feel with Taste the Mouthgasms.

Tiger Fig Chia Seed Jam

Tiger Fig Chia Seed Jam

I was blissing out at Trader Joe’s when I found Tiger Figs.

I figured them to be high carb fruitscraggles, but they’re surprisingly low in carbs. 5.61 net carbs per fig. I immediately popped one in my mouth hole upon returning home. Mindgasming bliss. These figs are a taste I’ve never known. My life story could have three pages written just on this flavor and mind capturement.

After eating three my compulsion to eat more was capturing and I had to think of a way to spread the tiger figs out. They also needed some preserving because a couple were already softening. Jam seemed a worthy solution.

I knew Craig had posted a low carb jam recipe before and a quick Google search pulled it up. He made a strawberry chia seed jam and said you could substitute any fruit. How blissing easy.

No lying bias, this is the best jam I’ve ever had. Make it and mindgasm then mouthgasm.

Figs are mind bursting in anti-oxidants and brain juices. These livened me within and I’m sure they’ll do the same with you. Make sure to nom one raw.

In raw form these fruits really mindburst while as a jam there are sweetly warm tones your mouth can’t go living without.

Tiger Fig Chia Seed Jam Ingredients:

8 oz (about two cups) Tiger Figs

1/4 cup Erythitrol, powdered (or choice of sweetener)

2 T Chia Seeds

1/4 Cup Water

To Create:

   1. Chop the tiger figs into small shapes. The larger the shapes the more chunky the jam will be. If you fear the chunks make smaller or maybe blend. Add these to a saucepan.

   2. Grind your sugar in a spice grinder until fluffy then coat the figs.

Powdered Figs   3. Mix the powdered sugar and figs together and turn the heat to medium. Let sit for about three minutes for figs to release their juices.

Heat the Figs   4. Mash the figs with a fork and let the mixture come to a boil.

5. Let boil for about five minutes with occasional stirs. The mixture will thicken.

Jammed

6. Add chia seeds and water to jam then stir for 1-2 minutes.

7. Remove from heat and let cool 15 minutes. The jam is then ready to serve or store.
